Description
A classic from Cameroon, Eru is a celebrated vegetable soup made from finely shredded wild spinach (Gnetum africanum) and waterleaf, cooked with palm oil, crayfish, and spiced meat or fish.
It has a distinctive slippery texture and a deeply earthy, forest-like flavor.
It is traditionally eaten with Wata Fufu, a very soft and stretchy version of fufu made from cassava flour. The slippery Eru and the soft, elastic Fufu create a unique and delightful textural combination, making this a highly prized and authentic dish among food connoisseurs.
