Description
Koki Beans is a traditional Cameroonian dish made from crushed black-eyed peas. The beans are dehulled, washed, and mixed with red palm oil, spices, and sometimes pieces of fish or shrimp. The mixture is then wrapped tightly in banana leaves and steamed until it solidifies into a firm, moist, and cake-like pudding.
The palm oil gives it a vibrant red color and a distinct, earthy flavor, while the steaming process keeps it incredibly moist. Served with plantains, Koki Beans is a protein-packed, flavorful, and satisfying dish that is a cornerstone of Cameroonian culinary heritage.
