Ekwang is a cherished delicacy from the Coastal and Grassfield regions of Cameroon, known for its intricate and time-consuming preparation, which is a labor of love. Grated cocoyam is
meticulously wrapped in large taro leaves, which are then slowly simmered in a rich, flavorful sauce made from palm oil, crayfish, smoked fish, and a special variety of tropical onion. The long, gentle cooking process allows the cocoyam to meld with the leaves, creating a uniquely sticky, dense, and comforting texture.
