Hailed by many as one of Africa’s finest soups, Egusi Soup is a cornerstone of West African cuisine. Ground egusi (melon seeds) are cooked to create a thick, hearty, and nutty stew. It’s typically prepared with a leafy green like spinach, and a generous amount of protein—beef, fish, or goat—and can be made vegetarian.
The egusi thickens the soup naturally, resulting in a rich, grainy texture that is incredibly satisfying. It is incredibly versatile, served with a range of swallows like pounded yam (fufu), garri, or plantains, making it a beloved and ubiquitous dish.
