Description
This version of Egusi Pudding is baked, resulting in a firmer, slightly drier texture compared to the steamed variety. Ground melon seeds are mixed with water, spices, and sometimes ingredients like onions or leafy vegetables, then baked until set.
The baking process enhances the nutty flavor of the egusi and gives the pudding a pleasant crust. Served with bobolo (fermented cassava wraps) and sweet plantains, it offers a wonderful interplay of textures and flavors—the earthiness of the egusi, the tang of the bobolo, and the sweetness of the plantains create a complex and satisfying meal.
